Was expecting to see some cool dynamic story but instead got a dialog with "go left" or "go right" the end. Did I miss something here?

The demo embedded in this repo is just a minimal proof-of-concept intended for prospective contributors to test whether they've got the repo set up properly – Emma's Journey will probably give you a better sense of what a StoryAssembler story is supposed to look like.

The Emma's Journey codebase lives in the LudoNarrative/ClimateChange repo, which contains a bunch of example StoryAssembler scenes in the StoryAssembler/data folder if you want to see how StoryAssembler scenes are defined. (The final subfolder contains the scenes actually shipped in the final game.)

The tests might also be a good place to inspect how certain features are supposed to work if you want to dig in a bit deeper.
