Describe the Feature

All the EKS clusters should be updated to a newer version to avoid extended support.

As per this document clusters in extended support will be charged at $0.60 per cluster hour.

Also this is a good chance to keep EKS up to date with all the new features, patches, etc.

Expected Behavior

EKS should be keep up to date.
