IRC and MatterMost bridge info

Following the existing pattern, here is the current list of channels I could find on IRC and MM.
Entries marked "NA" don't actually exist on that server (several in IRC, only one on MM). I also don't know if the "official" sponsored list of SIGs is correct.

I was told this wiki was going to be changed soon, so I didn't bother with an actual PR (I can do so if you want), but archived the information here as it might prove helpful. For other corrections should I just ignore them, make issues, submit PRs, or is there something else I can do to help (I am not a web/html/MD guru at all)?
