This PR attempts to implement vertical velocity support for CROCO model output. Note it's still in draft, until it has been thoroughly checked

To do

Conform (with @vesnaber) whether approach works
Add unit test
Expand docstring for Fieldset.from_croco
Provide example vertical velocity kernel
